Lemon & Garlic Grilled Zucchini

  • 4 medium zucchini, cut into 1/2-inch-thick slices
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 lemon juice and zest
  • 1/4 tsp. salt
  1. Place zucchini into a shallow bowl and add olive oil, garlic and lemon juice and zest. Refrigerate for 30 minutes.
  2. Preheat grill to medium heat.
  3. Place zucchini directly over the heat; close lid. Cook for about 12 minutes, or until tender, flipping every few minutes.
