Lemon & Garlic Grilled Zucchini

  • 4 medium zucchini, cut into 1/2-inch-thick slices
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 lemon juice and zest
  • 1/4 tsp. salt
Servings: people
  1. Place zucchini into a shallow bowl and add olive oil, garlic and lemon juice and zest. Refrigerate for 30 minutes.
  2. Preheat grill to medium heat.
  3. Place zucchini directly over the heat and with closed lid. Cook for about 12 minutes, or until tender, flipping every few minutes.
