Mango Salsa

  • 1 1/2 cups mango, pitted and diced
  • 1/4 cup green pepper, diced
  • 1/4 cup red onion, minced
  • 1 Tbsp jalapeno pepper, diced
  • 1/4 tsp ground cumin
  • 2 Tbsp fresh cilantro, minced
  • 1 freshly squeezed lime juice
  • 1 pinch salt and black pepper, to taste
  1. Toss mango, green pepper, onion, jalapeno, cumin and cilantro in a mixing bowl with lime juice. Season with salt and pepper to taste.
  2. Salsa may be prepared up to a day in advance, to allow flavors to combine.
