Ingredients
  • 1 cup cooked brown rice
  • 1 cup cooked quinoa
  • 2 cups arugula
  • 1 cup grape tomatoes, halved
  • 1/2 medium red bell pepper, diced
  • 1 cucumber, diced
  • 1/3 cup Kalamata olives
  • 2 Tbsp. red onion, diced
  • 1/2 cup hummus
  • 1/3 cup feta
  • 1/2 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1/2 lemon, juiced
  • 1/4 cup tahini

Instructions
  1. Layer rice, quinoa, arugula, tomato, bell pepper, cucumber, red onion and olives in a bowl.
  2. Mix together plain Greek yogurt, garlic, juice from 1/2 lemon, and tahini.
  3. Top bowl with dressing mixture, hummus and feta.
