Ingredients
  • 12 oz. pasta, cooked to package instructions
  • 2 cups halved cherry tomatoes
  • 1/3 cup Kalamata olives
  • 1 can garbanzo beans, drained and rinsed
  • 2 cups arugula
  • 1 red bell pepper, diced
  • 1/2 medium red onion, diced
  • 1 medium cucumber, diced
  • 1 cup feta cheese
  • 1 cup basil leaves torn
  • 1/2 cup extra virgin olive oil
  • 3 Tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • 3 garlic cloves, minced
  • 1/2 tsp. oregano
  • 1/2 tsp. dried basil
  • 1/4 tsp. thyme
  • ¼ tsp. red pepper flakes
  • ¾ tsp. sea salt

Instructions
  1. In a small bowl, whisk together the olive oil, lemon juice, mustard, garlic, herbs and salt.
  2. Add the pasta to a large bowl with the tomatoes, olives, garbanzo beans, arugula, bell pepper, cucumbers and feta.
  3. Pour in the dressing and toss to coat.
