Ingredients
- 3 apricots
- 2 tbsp unsalted butter
- 3 sprigs rosemary or thyme
- 1 tsp honey
- 1.5 cups Greek yogurt
- 2 tbsp pistachios shelled and crushed
- 1 tsp salt skip if you are using salted butter

- Slice the apricots in half and remove the pits.
- Melt the butter over medium-low heat. Place the apricots face-down in the pan and add the sprigs of rosemary or thyme. Sprinkle with salt. Fry until browning occurs - about 3 minutes. Flip the apricots over and let fry for another 2 minutes. Remove the rosemary/thyme and apricots from the pan.
- Put the Greek yogurt in a bowl and smooth it out. Place the apricots and rosemary/thyme on the yogurt. Drizzle with honey. Sprinkle with crushed pistachios.
