Ingredients
- 1 red onion
- 1 tsp pickling spice
- 1 cup vinegar
- 3 tsp sugar
- 3 tsp kosher salt

- Heat vinegar, salt, sugar and pickling spice in a pan.
- Slice red onion thinly.
- Stuff mason jar with red onion.
- Cover with vinegar mixture.
- Refrigerate for at least 1 hour, overnight will yield better results.
