Ingredients
- 1 cup marinara sauce
- 6 fresh basil leaves, finely chopped
- 4 large eggs
- salt and pepper, to taste
- 2 Tbsp. grated parmesan
- 2 slices french baguette, toasted

- Add marinara sauce to a small saucepan and simmer on low heat. Add chopped basil.
- Break eggs in a separate bowl, and add them carefully to the marinara sauce so the yolks remain whole.
- Cover the pan and simmer over low heat for 4 minutes, or until the tops of the whites are set.
- Remove from heat and season with salt and pepper.
- Using two bowls, add one slice of the toasted baguette to each bowl and top with the marinara sauce and eggs. Garnish with Parmesan and more fresh basil if desired.
