A simple non-dairy pesto.

  • 1 cup fresh basil
  • 1 cup fresh spinach
  • 2/3 cup roasted cashew pieces
  • 1/3 cup olive oil
  • 1 clove garlic, minced
  • 1 splash balsamic vinegar or lemon juice
  • 1 pinch salt & pepper, to taste
  1. Combine the basil, spinach, garlic, cashews, and balsamic vinegar in a food processor or blender and pulse until coarsely chopped. Slowly drizzle in the oil and process until fully incorporated and smooth.
  2. Season with salt and pepper to taste.
