Sweet Potato Black Bean Bowls with Cilantro Lime Vinaigrette

  • 2 cups cooked fluffy brown rice
  • 2 cups cooked simple black beans
  • 1/2 the roasted sweet potatoes
  • 1 bunch cilantro
  • 1 lime
  • 1 tsp. granulated garlic
  • olive oil, salt and pepper
  1. Wash and dry produce. Remove cilantro leaves from stems and mince leaves. Zest and juice one lime.
  2. Assemble prepped ingredients: rice, black beans, and sweet potatoes.
  3. In a small bowl, combine 6 Tbsp. olive oil, 3 Tbsp. chopped cilantro, lime zest and juice, and salt and pepper to taste. Whisk together to make vinaigrette. (Or add all ingredients to a blender and blend until smooth.)
  4. Serve brown rice, roasted sweet potatoes, and black beans in bowls. Top with cilantro lime vinaigrette. Enjoy!
