Vegan Rainbow Smoothie Bowls

Smoothie Base
  • 1 cup frozen mixed berries
  • 1 frozen, chopped banana
  • 1/2-3/4 cup unsweetened, plant-based milk
  • 3 strawberries, stemmed and sliced
  • 1/2 peach, sliced
  • 1/2 kiwi, peeled and sliced
  • 1/4 cup blueberries
  • Drizzle of almond butter
  • 2 Tbsp. low-sugar granola
  • 2 tsp. cocoa nibs
  1. Wash and cut the fresh fruit. Set aside.
  2. Place milk and frozen fruit in a blender and blend until smooth. Your smoothie should be nice and thick; divide between two small bowls.
  3. Divide toppings between the bowls, arranging colors in rainbow order.
  4. Serve immediately and enjoy!
Recipe Notes

Be sure to use frozen fruit for a thick smoothie base. Start with a half cup of milk and add more if needed, depending on the processing power of your blender.

Want to use different fruit toppings? No problem! This recipe is delicious with a variety of fruits; simply pick a swap in the same color group.
