Vegetable Fried Rice

A vegan fried rice packed with vegetables.

  • 1 1/2 cups dry brown rice
  • 1 cup broccoli, chopped
  • 1/4 cup green onions, chopped
  • 8 ounce mushrooms
  • 1 cup cabbage, shredded
  • 1 carrot, shredded
  • 2 cloves of garlic minced
  • 1 cup frozen peas
  • 1 cup frozen green beans
  • 1/2 tsp sea salt
  1. Cook the brown rice according to instructions and refrigerate overnight.
  2. Heat oil in large skilled. Add broccoli, green onions, mushrooms, cabbage, carrot, and garlic to pan. Cook for 6-7 minutes, or until vegetables begin to soften.
  3. Add peas and green beans and cook for 1-2 minutes. Add rice and sea salt and stir, cooking for 1-2 minutes until rice is warm.
