- 2 cups matzo meal
- 1 1/2 lbs Kadejan chicken thighs
- 1 large Farmer's Hen House brown egg
- 2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 1 Tbsp. Field Day canola oil, for frying

- Beat egg in a shallow bowl. Mix matzo flour, salt, and pepper in another shallow bowl.
- Heat oil in large pan over medium-high heat.
- Dip chicken thighs into egg then into matzo flour, pressing to coat and adhere ingredients to both sides. Place chicken in pan and cook until golden brown, roughly 2 minutes per side. Transfer to paper towels and pat to dry.
