Spicy Honey Garlic Tofu with Green Beans

Ingredients
  • 1 package extra firm tofu
  • 1 Tbsp. cornstarch
  • 2 Tbsp. honey
  • 1 Tbsp. soy sauce
  • 3 cloves garlic
  • 1 tsp. crushed red pepper flakes
  • 1 lb. green beans
  • 1/2 Tbsp. olive oil
  • 2 medium green onions for garnish
  • 2 Tbsp. sesame seeds for garnish
  • salt and pepper

Instructions
  1. Preheat oven to 400° F. Remove tofu from packaging and liquid. Press tofu very well with paper towels, and cut into 1/2 inch cubes. Toss with cornstarch and arrange on sheet pan. Bake tofu for 30-45 minutes, flipping halfway through.
  2. While tofu begins baking, clean stems and ends from green beans and toss with 1/2 Tbsp. olive oil. When you flip your tofu at the halfway point, add green beans to sheet pan and return to oven for another 15-20 minutes or until tofu is golden brown and green beans are tender.
  3. While tofu and green beans are cooking, mix honey, soy sauce, garlic cloves, and crushed red pepper in a small saucepan. Heat over medium heat until bubbly and thick. Taste and season with salt and pepper if needed.
  4. Remove tofu and green beans from oven and toss in the sauce. Garnish with sliced green onions and sesame seeds. Enjoy!
