What’s a Buckle? Delicious! It’s a balance between a cake and a fruit crisp, called so because of how the cake “buckles” around the fruit that’s on top of it!

This classic Peach Buckle is the perfect summer dessert to highlight local, ripe peaches and makes an easy crowd-pleaser for gatherings or afternoon tea.

Ingredients
  • 6 tbsp unsalted butter melted
  • 2 peaches sliced
  • 3/4 cup sugar
  • 1.5 tbsp sugar (for peaches)
  • 3/4 cup flour
  • 1 + 3/4 tsp baking powder
  • 3/4 cup milk
  • 1/4 tsp salt
  • 1 tsp vanilla bean paste OR 1 tsp vanilla extract
  • 1 pint vanilla ice cream for serving

Instructions
  1. Preheat oven 350 degrees
  2. Sprinkle sliced peaches with 1.5 tbsp of sugar
  3. Whisk flour, baking powder, sugar and salt in a bowl.
  4. Mix butter, milk, and vanilla in another bowl.
  5. Mix wet ingredients into dry, mixing until just incorporated.
  6. Pour Buckle batter into 9 inch pan.
  7. Layer peaches on top of mixture, poking them down into the batter.
  8. Bake 45-55 minutes - This bakes up gooey on the inside and crispy on the top.
  9. Serve warm with a scoop of ice cream on top.
Recipe Notes

This dish doesn't keep very well, so you might as well invite a few friends and eat the whole thing! Leftover could be stored in the fridge and might work best crumbled into Greek yogurt in the morning.
